Fabian Spielhofer runs his Künten Dairy with independence, individuality, and a keen instinct for exceptional cheese specialties. After gaining experience in both French- and German-speaking Switzerland, he worked alongside Sepp Brülisauer, who entrusted him with the historic dairy in 2020. Today, Fabian creates award-winning, small-volume cheese specialties from pristine raw Swiss milk at the last traditional village dairy in the Canton of Aargau—where his cheeses have earned their place on premium cheese boards throughout Switzerland.

The cheeses from Fabian also tell a story visually. Inspired by the traditional Aargau folk song “Im Aargau sind zwöi Liebi” (“There Are Two Lovers in Aargau”), the unofficial anthem of the canton, Fabian Spielhofer redesigned the labels. The song tells the story of two lovers separated by war who ultimately find their way back to one another. Each cheese features one of the two protagonists on its label—on Ur-Kraüter, the young woman is shown gathering herbs.

HANDCRAFT & AFFINAGE
3 - 4 months aged and washed with a secret herbal brine
After several weeks of maturation, Fabian carefully washes the firm Ur-Kräuter rind with a secret herbal brine made from garden herbs, giving the cheese its unmistakable personality. The herbs are clearly visible on the exterior, while the interior surprises with a clean, nutty, and herbaceous flavour profile that has made this cheese famous far beyond Aargau and Switzerland.
