Gewürztaler is the slightly more playful sibling of Ur-Kräuter. Mildly sweet, herbaceous, and carrying subtle warm and piquant notes, it brings plenty of character to any cheese board.

Fabian Spielhofer - a commitment to innovation

Fabian Spielhofer runs his Künten Dairy with independence, individuality, and a keen instinct for exceptional cheese specialties. After gaining experience in both French- and German-speaking Switzerland, he worked alongside Sepp Brülisauer, who entrusted him with the historic dairy in 2020. Today, Fabian creates award-winning, small-volume cheese specialties from pristine raw Swiss milk at the last traditional village dairy in the Canton of Aargau—where his cheeses have earned their place on premium cheese boards throughout Switzerland.

"IM AARGAU SIND ZWÖI LIEBI"

When love prevails, spices take flight

The Aargau folk song “Im Aargau sind zwöi Liebi” tells the story of two lovers separated by war. Unlike most tales of this kind, however, it ends happily: the couple reunites. A fitting reason for the female protagonist on the Gewürztaler label to be juggling the spices that give this cheese its sweet and warm piquant character.

HANDCRAFT & AFFINAGE

Garlic, onions, pepper, and paprika are added directly to the curd during cheesemaking, creating a cheese that never has to ask for attention. Gewürztaler is aged for 3-4 months in Fabian's cheese cellar.
